Tomato Brie Pie

Serves :

Allergens:

  • Dairy
  • Nightshades
  • Grains
Ingredients
  • 1 ½ pounds ripe tomatoes chopped
  • 5 oz brie cheese cubed (remove rind)
  • 2 oz mozzarella cheese cubed
  • 1 oz fontinella cheese cubed
  • ½ cup chopped basil
  • 3 large eggs
  • 1/3 cup heavy cream
  • 1/3 cup milk
  • Piecrust shell
Directions
  1. Preheat oven to 350 degrees
  2. Place cheese cubes in bottom of pie shell
  3. Place tomatoes on top of cheese
  4. Top with basil
  5. Beat eggs, cream, and milk
  6. Pour over the top
  7. Bake until center is set, 40-50 minutes
  8. Tastes great with added diced ham or bacon bits. MSN
