Ingredients
- 1 ½ pounds ripe tomatoes chopped
- 5 oz brie cheese cubed (remove rind)
- 2 oz mozzarella cheese cubed
- 1 oz fontinella cheese cubed
- ½ cup chopped basil
- 3 large eggs
- 1/3 cup heavy cream
- 1/3 cup milk
- Piecrust shell
Directions
- Preheat oven to 350 degrees
- Place cheese cubes in bottom of pie shell
- Place tomatoes on top of cheese
- Top with basil
- Beat eggs, cream, and milk
- Pour over the top
- Bake until center is set, 40-50 minutes
